Crema , all depends on the green beans + Blend/s and
roasting + Storage,
Water + Grinding,
brewing + Extracting.

some beans with less crema, I have not used such coffee for espresso.
for example an espresso blended coffee, kept in the valve bag, 2+ months since it is a commercial ones shipped from a Italian master roaster, I brewed with my poor E61 with K-10, using 17.5-18g grounds, 92-96 degree hot water, light tamped, much crema.
normally , I wait less than 1 minute before drink.
crema, may be I am wrong to this, when the espresso completed at once from the machine, count there NOT after extraction 1+ minute ... ?
At that moment, no crema is NOT fresh enough to myself.

Still too fresh for your setting I mean the espresso maker + grinder.
I used 5-7days roast with my setting are ok.
