I tried to use hot water from the beginning.
I think it should be complete the whole thing as soon as possible.
So, I only use ??? when the extraction started to try to get crema as much as I can.

Use low heat. We are trying to limit the temperature under boiling (100degree C) When water is too hot coffee tend to taste brunt. |
