Hello,

sometimes when they say the beans have a caramel-like sweetness in it, what does it mean? Usually I cannot get such taste in espresso

Some says it's the aroma ( wet aroma ) rather than the taste, that tastes like caramel. But I'm not so sure

Not an expert here but I think of Snicker candy bar or, god forbid, just get the caramel sauce from Starbucks... Smile

For me, the taste is like the caramel popcorn you get at the cinema. I had some Sidamo today that had a strong aroma and taste of caramel-like sweetness. It didn't last long and disappeared after 5 minutes of cooling.

I should also say that the only times I have experienced this caramel sweetness has been in either under-extracted coffee or with recently roasted beans (under 24 hours). So for me, this caramel sweet taste is not so desirable.
I also have never experienced it with espresso.

If you look at the description on the star$ coffee beans ( I think it's their house blend). It's written .....caramel like sweetness....

This sweetness also comes up when you make a great cup of syphon and cool it down for 1/2 hour or so.. the long you rest, the sweeter it will be.

Personally I've tried it with red cherry.. 2 hrs.. very sweet.. like real caramel.

yes it does occur in freshly roasted beans.

Fresh roasting gives the coffee a hit of toast, which mingles with the sweetness of the coffee, and that sweet taste is very like caramel-sweetness.
