我呢半年來係咁買生豆, SM一出就掃, 每次18磅, 剛剛數下個"倉", 竟存放了86種不同farm的咖啡生豆! 以而家的存貨量, 同每日3杯double shot的消耗量, 我估飲兩年都未飲得晒!

Yesterday, I met Mr. Jeff Chang of Cafe de Impression whose coffee Guatemala - El Injerto - Pandora de Guadalupe - Pacamara 2011 just scored 96 at Coffee Review.
Cafe Taster Mr. Jerry Ng introduced this bean to my CFO in September so I bought 5 kg.Laughing

Jeff and Jerry had cup the beans I roasted on 10 Dec. : 1 - Kenya Kirinyaga Peaberry Gakuyu-ini; 2 - Ethiopia Dry Process Jimma -Nigusie Lemma; 3 - Kenya Nyeri Tegu AB & 4 - Ethiopia Yirga Cheffe G3 Worka FTO. I bough them from Coffee Shrubs in 2010 and stored in temperature and humidity controlled room.

Jeff noted there was a hint of woody taste in the Lemma despite the fragrance/aroma were excellent. He suspected that this DP bean ,which is low in water content, was dehydrated due to prolong storage.

I would like to advise all bean collectors that beans should be consumed soonest possible. Unfortunately I have over 40kg in stock.

40kg all Lemma? Or all stocks? For your consumption level, seems 40kg is too little for everything, but then if it's 40kg only for Lemma, it's a bit too much unless you bought the whole 60kg bag?

I use small vacuum bags for bean storage (per roast batch size). Hope this can slow down the deterioration.

Good idea. But green bean release gases and I doubt if it really help.
Besides, did you pick out the defects first?

I did this for 2 to 3 months already, only 3 out of more than 100 bags has air enterred the bag which I think is caused by poor sealing or poor quality bag.

I did not pick defects before roast, but will pick the obvious after - empty shell or deformed bean....
